Ingredients Sliced onion Risotto rice Stock Pancetta Mixed vegetables Butter Method Place the butter in a pan, add the onions and fry until lightly brown. Add the pancetta and fry until it starts to crisp Add the rice and the stock and bring to boil. Stir well then reduce the heat for 15-20 minutes. When the rice is about to cook add the mixed vegetable and cook for a further 10minutes. Serve the food hot
